In sublimation, the vapor pressure of the liquid produced at the surface of a heated solid exceeds the pressure of the surround gas (like the atmosphere) so it immediately turns to gas instead of having a visible liquid phase. While,

In evaporation, the vapor pressure of a liquid from a melting solid is less than atmospheric pressure, so the liquid is stable and turns to vapor into the surrounding gas.
